Note: то есть это одна и та же конструкция, обозначающая одно и то же, только в одном случае идет ing-окончание, а во втором случае идет первая форма глагола за счет but.
- I can't help eating sweets. / I can't help but eat sweets.

А еще фраза I couldn’t help overhearing - это супер вежливый способ сказать, что вы случайно услышали какую-то личную информацию.
