"Rice" of cauliflower with corn and peas

This unusual way of cooking cauliflower has recently become popular in many vegetarian cafes. The dish turns out to be low-calorie, so it is perfect for a day off.

If you take canned corn and green peas, add them at the very end along with the cauliflower.

Ingredients:

cauliflower - 350 g
frozen corn - 50 g
frozen green peas - 50 g
carrots - 1 pc
garlic - 2 cloves
soy sauce - 2 tbsp.
vegetable oil - 2 tbsp.
pepper - to taste
Method of preparation:

Separate the cauliflower into florets and chop in a blender or food processor. You will have "rice" from the cauliflower.
Cut carrots into small cubes, chop garlic finely.
In a pan in vegetable oil, fry garlic and carrots until soft.
Add frozen peas and corn. Braise for about 5 minutes.
Add cauliflower rice, stir in soy sauce and season with pepper. Sauté vegetables over low heat for about 3 minutes.
A light vegetarian dinner is ready!
