The tastiest dishes of the Yamal nomads
The Yamal Peninsula in Siberia is home to over 10,000 people, the largest number of nomads in Russia. They are mostly Nenets, Khanty and Selkup. Once a year, they come to the towns to celebrate ‘Reindeer Herder’s Day’ and present their culture to the urban dwellers. During this festival in Salekhard, we enjoyed a rare opportunity to taste some of the unique dishes of the nomads.
The main dish is called ‘stroganina’ (Photos 1&2). It’s frozen raw fish sliced in thin, almost transparent shavings. The slices can be dipped into a mixture of salt and pepper. Sometimes, they prepare venison the same way.
In Yamal, people also eat cooked fish (3). The most popular kinds of fish are vendace and whitefish. They are usually baked or fried and used as stuffing for pies.
The traditional hot dish is ‘ucha’ or ‘shurpa’ (4). This is a thick and very hearty soup.

Why was chewing gum banned in the USSR?
The first chewing gum in the USSR was produced only in the 1970s. Before that, Soviet children got their gum through more fortunate classmates whose parents traveled abroad or through “stuffers”, who bought it from foreigners who came to Russia and then resold it.
Some kids even dared to go to the places where foreign tourists usually appeared in the hope of begging for the desired item. Parents and teachers tried in every way to discourage “shameful begging” and frightened young people with stories that gum could be poisoned or even have blades hidden in it. But, it was still a cult item for many.
The Soviet leadership launched its own gum production only after the tragic events, in which 21 people died and 13 of the victims were under 16 years of age.

Nareznoy baton This is the most common type of bread in Russia (although its name is a matter of disagreement between Moscow and St. Petersburg, where it’s called
bulka), but this one is made of wheat, and often called simply ‘white bread.’
One can always recognize
nareznoy baton by its top, specifically decorated with large notches. It also has remarkable parts:
gorbushki, the very ends of the loaf!

baton is the most typical for making buterbrod, the Russian sandwich, which also corresponds to its name:
‘nareznoy’ derives from ‘narezat,’ ‘to slice.’

RECIPE: Nettle jam Ingredients: Nettle leaves – 1 cup
Honey – 1/2 cup
Lemon – 1/2
Preparation:1. Scald the young nettle leaves in boiling water. Repeat.
2. Heat the honey in a pan, add the chopped nettle leaves, and simmer for two minutes.
3. Add lemon juice and boil for two minutes.
4. Put the jam in a jar and store in the refrigerator.
