Corn Cookies Ingredients:
• corn flour - 350g
• sparkling mineral water - 150ml
• vegetable oil - 1 tbsp.
• sugar - 1/2 tbsp.
• baking soda - just a bit
Optional:
• raisins, prunes or any other dried fruits - 50g
Method:
1. Pour the raisins or prunes (you can take both) with hot water and leave for 10-15 minutes.
2. Drain the water, wash the dried fruits and put on paper towel.
3. Make a dough out of sparkling water, cornflour, sugar, cooking oil and baking soda. The dough should be thick enough and not to stick to your hands. You may need to add a little more flour.
4. Leave the dough for 15-20 minutes to rest.
5. Add the finely chopped dried fruits to the dough. Knead it once more.
6. Lightly dust the surface of the table with flour and roll out the dough into a 1-1.5 cm thick layer.
7. Cut out the cookies and place them on a baking tray lined with baking paper.
8. Bake in the preheated to 180 degrees oven for 30 minutes.
