Profiteroles with Sour Cream

Ingredients:

• water - 1/2 l;
• butter - 150g;
• flour - 2 tbsp;
• sugar - 1,5 tbsp.
• egg - 7 units;
• salt - 1 pinch;
For the cream:
• sour cream - 400g;
• powdered sugar - 1 tbsp.

Method:

1. Add butter, salt, sugar to water and bring to the boil.
2. Gently add flour, stirring with a whisk.
3. Cook, stirring, for 5-7 minutes.
4. Cool the dough down to about 60 degrees.
5. Beat the eggs into the batter, one by one, stirring with a mixer.
6. Transfer the mixture to a piping bag or pastry syringe.
7. Squeeze the dough onto a paper lined baking tray in the form of swirls.
8. Bake the profiteroles in the preheated to 200 degrees oven for at least 15 minutes.
9. Cool the sour cream, mix with the powdered sugar and whisk with a mixer until thick.
10. Make neat cuts in the bottom of the profiteroles and fill them with the resulting cream. Place in the fridge for 30 minutes.
